We have been getting some beautiful eggs lately and I thought I would share our Spinach Quiche recipe.
Spinach Quiche
8 eggs
1 medium onion chopped
Fresh mushrooms or a 1 small can
2 heaping cups of fresh spinach or 1 box frozen
3 cloves of chopped garlic
1 Tbsp of parsley
1/2 cup sour cream
4 oz. cream cheese
4 Tbsp. butter
2 pie crusts (I will share our whole wheat crust recipe later)
Chop all of your veggies and beat your eggs, mix together thoroughly. Break your cream cheese and butter in bits and add that to your mixture. Next, add sour cream and mix.
Pour into pie crusts and bake at 375* for 30-40 minutes.
Serve with a homegrown salad and enjoy.

We are getting anywhere from 8 to 10 eggs a day. This will be a good recipe to use up a lot at once. Thanks for sharing!!!
