Yesterday morning, my eldest son, Eli got up early with his dad and I.
I asked him what he would like for breakfast, the first one up has certain privileges you know. He thought and decided muffins sounded good to him. Well, sadly, I am thinking he might have been thinking of the sweet, chocolatey chipped ones that come in a bag that you mix with milk.
Not where my mind was headed. (by the way, we don’t have those in our cupboard… well, not anymore at least)
I decided on Carrot Cake Muffins and let me tell you… They were delicious!
And he did not mind it wasn’t the junk from the box.
HOORAY!!!
I will break it up into parts:
Wet:
- 1 apple, grated (I grated the peel and the pulp)
- 1/2 cup raisins
- 2 cups grated carrots
- 1/2 cup coconut
- 1/2 cup honey
- 1/2 cup coconut oil
- 3 eggs
- 2 tsp vanilla
- 1/2 cup chopped nuts ( I didn’t add these)
Dry:
- 2 cups flour (1/2 white, 1/2 wheat is a nice ratio if you have it)
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
Mix the wet together, mix the dry together and then stir the two till just combined and scoop into muffin pan and bake at 350* for 20 min till set.
Makes one dozen large muffins.
