Pancakes are one of my favorite foods.
I think my family feels the same, because when I make them, they are all happy about it!
I love the THM version of pancakes also, they are FULL of protein and yumminess!
Here’s how I make them:
1 cup oat flour (you can grind 1 cup of oats if you have them)
1 cup cottage cheese (for THM, use the low fat or 0% fat)
1 cup egg whites
1 tsp sweetener (for THM, I use stevia, truvia, xylitol, etc)
1 tsp baking powder
1 tsp vanilla
**In my opinion, even though my family loves this version, I would think you could totally substitute the full fat for the cottage cheese and use honey or sucanat for sweetener if you wanted for your husband and children. I am needing to follow plan because I am still trying to lose weight and I don’t want to cross over, but for them, I think it would be fine.**
Blend in your favorite blender and fry them up in a pan. Use a non-stick spray on your griddle to keep the fat low.
You will feel good and satisfied with these pancakes even though they are low fat.
